First Fire

   

The unit is double walled construction. Heat and smoke from the fire pan travel up through the walls and enter the cooking chamber at the top.

Fire pan with ash pan underneath and water pan above. Smoke and heat travel up the sides of the water pan through the double walls and enter the cooking chamber at the top

can be used to bypass the water pan
and let dry air into the cooking chamber

Exhaust outlet in back. Heat and smoke travels from top down and out through this vent. Exhaust goes up through an internal chimney to the exhaust stack on top
